Summary:

Rapidly growing, highly innovative private food manufacturer in Milwaukee, WI, is seeking a FOOD TECHNOLOGIST to join their R&D team and head up the efforts of their meat & protein applications and seasonings laboratory. Reports to Director of Protein Applications and Seasonings Lab

Responsibilities:

         Product Development of seasoning blends for processed meat products that meets or exceeds the expectations of the customer††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††††† Projects primarily involve:

o    Hands on reverse engineering for competitor matches, reformulate current products for cost reduction, improved functionality, or process optimization; formulate products with special handling or safety concerns; and implement innovative processes.

         Collaborate with sales and customers to develop a custom product that meets or exceeds the expectations of the customer.Maintain project from conceptualization to commercialization.

         Interact with customers as needed to deliver to their expectations.

         Consult with suppliers and procurement to determine appropriate raw materials necessary to develop safe, quality products.

         Conduct regarding alternate ingredient qualifications to assure that company has a consistent and cost effective ingredient supply.Document findings and communicate with†† Purchasing/Sales/QA.

         Determine ingredient and finished product cost feasibility.

         Establish and develop the QA procedure and specifications according to designated procedures.

         Assist in compiling commercialization documentation:Product Specification creation

         Support customer sampling program through the coordination and supply of outgoing samples.

         Facilitate and direct scale-up by assisting with initial production runs as needed internally and externally.

         Coordinate aspects of the scale-up process:

o    Conduct and oversee team bench top activities to determine product and ingredient specifications, optimize formulations, capabilities, and oversee preliminary processing steps for operations

o    Compose Platform and Prep instructions

o    Participate in pre-production meetings(s) and review Scale-up Details with, production, QA & Sales.

o    Collect and evaluate analytical and product data from bench sample

o    Assist QA with issues and opportunities

o    Finalize hand off of new products to plant

         Collaborate with the assigned sales representative and customer service representative to establish constructive working relationships with customers and provide for customerís requests in a timely manner.

         Effectively demonstrate company products to customers.

         Stay current on new technologies and trends, functional ingredients, and innovation research.Apply that knowledge to Technology and Culinary projects from bench top through commercialization.

         Work with R&D and Sales for development of new and existing products with health wellness benefits, specific dietary guidelines, and/or reduction or elimination of unwanted nutritional characteristics (sodium reduction, Trans Fat free, etc.)

         Involvement in prep and cook of bench-top samples per application to assist culinary as needed

Qualifications:

         Bachelor's degree in food science or related field required.

         Master's degree in food science or related field preferred.

         3-5 years experience in food product development to include meat seasoning product development & flavorsystems (dry seasonings, rubs, marinades, injections, etc)

         Proven ability to develop successful seasoning blends formeat products.

         Proven knowledge of ingredient functionality across a broad range of meat products (phosphates, oleoresins, spices, etc)

         Able to handle multiple projects simultaneously in a fast past R&D environment
